Grape variety: Primitivo.
Training system: old Apulian bush-vine.
Vines age:60-70 years old.
Production area: very red soil rich in iron oxides upon a layer of calcareous rock, located in the Salento region (Manduria e Sava, in the province of Taranto).
Vinification: collection of slightly overripe grapes; de-stemming and crushing; maceration at controlled temperature for 10-12 days with regular pumping overs. Draining off and malolactic fermentation in stainless steel tanks. Ageing in American and French oak barriques for the next 12 months.
Sensory features: deep ruby red with garnet reflections; complex bouquet with hints of ripe red fruit, plum jam, vanilla and cacao. A full-bodied wine, velvety, with a persistent aftertaste releasing notes of chocolate.
Best served with: recipes of the Apulian tradition; meat with savoury sauces, roast meats and mature cheese.
Serving temperature: 18°C.
