Grape variety: Primitivo.
Training system: mainly bush-vine.
Vines age: 20-40 years old.
Production area: very red soils rich in iron oxides lying upon a layer of calcareous rock, located in the Salento region (province of Taranto).
Vinification: de-stemming and crushing of the grapes; maceration at a controlled temperature for 8-10 days with regular pumping overs. Draining off and malolactic fermentation in stainless-steel tanks. Ageing in used American and French oak barriques for the next 8-10 months.
Sensory features: ruby red color with violet dark reflections. Intense, complex, fruity aroma, with notes of small red fruits (cherries and blackberries). Velvety and soft texture, warm and quite tannic, with great persistence.
Best served with: excellent with rich first courses and red meat, game and medium-seasoned cheeses.
Serving temperature: 16-18°C.
